TASTING NOTES
Herbaceous notes of mustard grass and floral lemon blossom open to flavors of tropical fruit and tart green apple. Citrus undertones and a crisp minerality uplift a graceful, lingering finish.
WINEMAKING NOTES
The grapes for this Sauvignon Blanc were hand harvested, whole cluster pressed and settled overnight before sending to tank for fermentation. Wild yeast was used to add dimensionality and layers of flavor to the wine. After fermentation, the wine was racked off the primary lees and held cold until bottling.
FOOD PAIRING
Try alongside lemon-garlic shrimp skewers or an arugala salad topped with goat cheese.

Chardonnay
Chardonnay
TASTING NOTES
This full-bodied Chardonnay exhibits elegant aromas of apple and pear bound with flavors of vanilla and creme brulee.
WINEMAKING NOTES
The fruit for this Chardonnay was grown in vineyards from Yountville to American Canyon, the coolest regions of the Napa Valley. The grapes were pressed directly to tank, and partial malolactic fermentation took place to preserve acidity.

Pairs delightfully with mesquite grilled chicken or fettuccine alfredo.

Generous aromas of ripe bountiful fruit marry effortlessly with refined spices. Well balanced with tones of creamy chocolate, vanilla and toasted oak spice, this wine has a long smooth finish.
WINEMAKING NOTES
The grapes for the Hawkstone Napa Merlot were hand harvested in the dark of night to encourage the fruit-forward characters of this wine. Elevage lasted 10 months, and malolactic fermentation took place in barrel to draw out the soft smoothness on the palate. Pumpover was performed three times per day to maintain the rich fruitiness and tannins.
FOOD PAIRING
A perfect accompaniment to pork chops and apple Dijon sauce or Italian-style sausages with fennel.

WINEMAKING NOTES
The grapes for this classic Napa Cabernet Sauvignon were carefully hand harvested to ensure the highest quality. Elevage lasted 10 months, and malolactic fermentation occurred in barrel. Pumpover was performed three times per day to maintain the rich fruitiness and tannic structure of this wine.
